From the unique site of the Presqu'île de Laussac, this circuit makes us "take the height" to offer us quite exceptional points of view on the Sarrans reservoir and the hamlet of Laussac.

DISCOVERY : The Cantal of Thérondels At the exit of the village of Thérondels, the cheese cooperative has been making a Cantal cheese since 1948, a cousin of the Laguiole: the Cantal de Thérondels (Visit 05 65 44 24 32). Its production perpetuates the tradition of farm cheese made from raw milk in the farms of the plateau. The cooperative refines a part of the production and according to the duration of the maturing the taste is different. It offers young (30 to 90 days), intermediate (90 to 180 days) and old (over 180 days) cheeses. The other part of the production is sold at less than 30 days to wholesalers who finish the maturing. In 1950, 41 producers delivered 315,000 liters of milk for the production of Cantal cheese. In 1987 the collection was 1,500,000 liters. Today the annual collection amounts to 3,500,000 liters delivered by 20 producers. This Cantal cheese, which is very popular in Parisian restaurants, is also sold on local markets.
