There is a well-kept secret in Moselle: the making of the Boulay macaroons. They are world-renowned for their supple and soft consistency, their finely sweet taste with a delicate almond flavour. The recipe was finalised in 1854: a macaroon that was to become the emblem of the town where no reception would be held without this prestigious jewel of French know-how. They are made only with fresh almonds, sugar and egg white and are hand made with a spoon. Even today the macaroons are still made according to the original recipe and know-how.
