Ferme Moulini

At Ferme Moulini, Sarah and Ben grow local cereals, transform them into stone-ground flour and bake them by hand with natural leavening to make bread, farmhouse pizzas, focaccia and sweet specialties.

Ferme Moulini is part of a collective farm in the hamlet of Serres. Benoît and Laurence Causse, the historic farmers, welcomed Sarah and Ben to diversify the farm's production, initially dedicated to organic calf rearing. Since 2023, local varieties of wheat, rye, spelt, barley, buckwheat, chickpeas and lentils have been grown in rotation with the grazing of the suckler cow herd. The grain is harvested, sorted on the farm and transformed into flour on the Astrié stone mill. This is the process that produces the highest-quality flour, which is nutritious, easily digestible and full of flavor. Sarah and Ben then bake their flours, using natural sourdough and long fermentation, and bake the dough pieces in the farm's wood-fired oven. The result is a range of breads, farmhouse pizzas, garlic and herb focaccia, "étoiles de Nuces", sweet specialties of their own invention, and chickpea mousse with tarragon. You can find all their products for sale at the bakery after the two weekly bake-offs (Wednesday and Friday), for distribution in the villages of Souyri and Salles la source on Thursday evenings, at the Firmi market on Saturday mornings, or at the Ptit Bio in Marcillac from Friday evening to Sunday, and the fougasses at the Panier Paysan in Nuces from Wednesday to Saturday.
