FROMAGE DE BREBIS FERMIER, CARRÉ D'OUAILLES

Organic producers, Emeline and Stan are an exception in the Nord-Mayenne region because ewe farms are rare. Their Lacaune ewes allow them to collect an average of 1 liter of milk per day: it's not much but it's a very good quality milk. They transform it into tomme, sweet ewe's milk, fresh cheese or spreadable cheese with garlic and herbs, butter, brousse, yoghurts or even chocolate dessert creams. Sale at the farm on Fridays from 4 to 7 pm from March to the end of December.
