A truly innovative crop, microgreens are a treat for both the eye and the health. In fact, they are far more concentrated in vitamins, mineral enzymes and antioxidants than a fully-grown plant. Convinced of the merits of his project, Mathias Jérôme founded Les Jardins Totem, an urban farm that gives pride of place to micro-pods, mushrooms, wheatgrass and other edible flowers. He has received MOSL quality certification for his live micro-pods in trays on organic organic substrate, grown indoors.
