In 1887, Jacques LOBSTEIN, owner of the brewery in DOMMARTIN lès REMIREMONT built the buildings of the future GRANDE BRASSERIE et MALTERIE VOSGIENNE, designed to meet industrial brewing standards. The work was completed in 1900 with the construction of the malt house. A handsome residence designed by architect CLASQUIN replaced the old premises in 1904. Around 1930, René LOBSTEIN modernized the brewing process, building a magnificent ART DÉCO-style brewhouse. The brewery ceased production of the famous "VOSGIENNE" in 1956, but remained in business until 1975, when part of the building was converted into a museum in 1987. Brewing demonstrations have been held here since 1993. In 2022, the VILLE SUR ILLON brewery-museum was selected by the BERN mission to restore parts of the museum and extend the visitor circuit.
